Carrot Burger

This is the perfect time to grill out, but maybe a burger isn’t what you’re craving.  Try Dr. Anne’s recipe for a light a refreshing carrot sesame burger:  In a food processor shred three large carrots and set half aside in a large mixing bowl. To the food processor add one can of drained chickpeas, one small onion, three tablespoons sesame seed paste, two garlic cloves, on quarter cup of cilantro, and one egg. Grind to a paste. Spray a small skillet with PAM and heat over medium-high.  Add reserved carrots and cook until fragrant and softened.  Return to bowl; mix in your chickpea paste, half a lemon juiced, three tablespoons sesame seeds, and three tablespoons breadcrumbs, season to taste with salt and pepper.  Form into patties.  Heat canola oil in large skillet over medium-high heat.   Add patties, and fry until both sides are brown.
