Green Bean Fries

When you think of burgers, the best side is fries, right?  But French fried potatoes can pack a lot of calories and not many nutrients.  But you can make lean green bean fries that are not only low in cholesterol and fat, but also high in dietary fiber, protein and iron. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.  Stir together one cup of bread crumbs, half a teaspoon of salt, half a teaspoon of black pepper, half a teaspoon of garlic powder, and one teaspoon of red pepper flakes for added heat.  Place in a shallow bowl or plate.  Whisk together two egg whites until frothy.  Then, dip your washed and trimmed green beans into the egg white and roll in the bread crumbs.  Place on the parchment paper in a single layer.  Bake for 15-20 minutes until green beans are nice and crispy, shaking the baking sheet once during cooking.
