Hello, I’m Amanda McNulty with Clemson Extension and Making It Grow.

John Nelson, who taught me field botany and was the head of the Herbarium at USC, kindly comes to Sumter for an occasional taping of our show. We were talking recently about tomato sandwiches, a go to for lunch or supper on hot summer days. Pretty easy – put mayonnaise on white bread, then add sliced tomatoes — I usually peel them just to keep peace in the family — salt and pepper, then top with another piece of bread lavishly slathered with mayonnaise.

John says his entire life he’s been putting potato chips on top of the tomatoes! After my gaping jaw closed, I asked him what kind of potato chips. “Any kind, even those with ridges will work.” It’s a good excuse to get some of those reduced guilt chips and try them out. A crunchy, slurpy sandwich.

Amanda McNulty is a Clemson University Extension Horticulture agent and the host of South Carolina ETV’s Making It Grow! gardening program. She studied horticulture at Clemson University as a non-traditional student. “I’m so fortunate that my early attempts at getting a degree got side tracked as I’m a lot better at getting dirty in the garden than practicing diplomacy!” McNulty also studied at South Carolina State University and earned a graduate degree in teaching there.
