Ginger Lemonade

This is the perfect weather for lemonade!  While the classic drink is always refreshing, try this spicy ginger version for a little something different.  In a saucepan, combine eight cups of water, one cup of sugar, and ½ a cup of grated ginger over medium heat until sugar is dissolved. Remove from heat, stir in four cups of freshly squeezed lemon juice and three quarters cup of honey.  Place in the refrigerator and let cool for about an hour.  When ready to serve, add ice and garnish with lemon slices.  If the lemonade is not sweet enough for your taste, add fine sugar to the mixture until your taste is satisfied.  Not a fan of ginger?  Try this recipe with one cup of fresh mint leaves instead and toss it in a blender with ice for a frozen mint lemonade treat!
