Jar Baking

Canning Jars are great for a number of things, but because they’re built to withstand tremendous heat for the boiling required to can fruits and vegetables, they’re also really good for baking!  Make a single serving portable cake by starting with two and a half cups of fresh seasonal fruit and divide into four half pint canning jars.

Then, combine half a cup of flour, half a cup of sugar, and half a teaspoon of salt.  Whisk together with a fork, divide and add it to your jars with fruit.  Top the jars off with a teaspoon of butter.  Once filled, put the jars into a square glass baking dish and fill the rest of the baking dish with dried beans to keep the jars from sliding around.  Bake at three hundred and fifty degrees for one hour.  After baking, let the jars cool completely, and top with whipped cream if you like.  These will keep in the refrigerator for up to one week.
