No-Bake Energy Bars

Do you find that your energy drops off dramatically in the afternoon?  Are you struggling to stay awake and stay on task during the day?  While coffee and caffeine may offer a temporary pick-me-up, a better alternative is a light snack packed with protein, fiber and antioxidants to rev your energy and keep your brain firing on all cylinders.  Here is a great recipe for no-bake energy bars. Mix one cup of quick-dried oats, 1/3 cup of dried tart cherries, 1/2 cup of all-natural peanut butter, 3 tablespoon of honey, and 1 teaspoon of vanilla in a large mixing bowl.  Spread the mixture out in a pan and refrigerate for two hours.  Then slice and enjoy!  You’ll want to refrigerate your uneaten bars.  These are great for a mid-morning or mid-afternoon snack and will help stabilize your blood sugar so you can avoid that midday slump!
