Hello, I’m Amanda McNulty with Clemson Extension and Making It Grow. Corn off the cob is a good bit of trouble but you will never want to eat canned or frozen again. You have to shuck and pick all silk off fresh ears of corn, put your cutting board over parchment paper, get a medium-sized knife, and cut the kernels off – but DO NOT cut all the way to the cob. It’s a little messy -- put the kernels in a bowl and then scrape the cobs with your knife to get the milk out. Get the wayward individuals, put it all in a pot over a little melted butter–and don’t overcook it. For my son Conrad, I make creamed fresh corn off the cob; how come those boy children get their mommas to go the extra mile for them?
